I made these this afternoon, adapted from a recipe for chocolate muffins, and they turned out brilliantly.
250g self-raising flour
2tsp baking powder
2tsp ground cinnamon
175g caster sugar
2 medium eggs, beaten
100ml sunflower oil
2 medium apples, peeled and roughly chopped
Preheat the oven to 170ºC (375ºF, gas mark 5).
Line a 12-hole deep muffin tray with paper muffin cases.
Sift together the flour, cinnamon and baking powder; stir in the sugar. Add the remaining ingredients and mix lightly together.
Spoon the mixture into the prepared cases. Bake for approximately 20-25 mins or until golden and springy to the touch. Cool for 10 mins; transfer to a wire rack and leave until cool.
